Me? Like to cook? NOT AT ALL.  So when I find a recipe I love that goes in the crockpot, this girl is in heaven!  This recipe fits the 21 Day Fix program and Southwestern Chicken is not only delicious and healthy – it’s easy too. Here you go:

1 pound Chicken breasts, 15 ounce can Black Beans, Bag Frozen Corn, Jar Chunky Salsa (I like Newmans Organic Mild but if you like spice go for it!).  Put all in your crockpot and cook on low until done.  I let mine go for usually 6 hours.  I like to shred the chicken and mix everything together.  Top with 1 ounce cheddar cheese.  Less than 300 calories and YUMMY!!21 Day Fix Crockpot Southwestern chicken
