Healthy Crockpot Tomato Basil Soup

I love my crockpot.  Makes me think I can actually cook! One of the healthiest and tastiest recipes I have been able to make in the crockpot is tomato basil soup.  I literally throw every one of the ingredients, except the milk, into the crockpot in the morning.  After it’s cool, you add the milk or 1/2 and 1/2 OR you can choose not too.  That’s up to you.

List of ingredients:

Creamy Tomato Basil Crockpot Soup

1 tablespoon olive oil

1 cup onion, green pepper, and celery (I buy it chopped in the produce section or you can use frozen)

1 or 2 boxes of chicken or vegetable broth – your preference but I use 1 box and the same amount of water

2 28 ounce cans of plum Italian tomatoes

Chicken base or chicken or vegetable boullion to taste. Again I use chicken base – that’s my preference. Watch the amount you use so your soup isn’t too salty.

Sweet Basil to cover.  More or less per your preference but I usually sprinkle to cover the top then put the lid on.

Cover and cook on high for 4 hours or put on low for all day simmering.  Imagine how your house will smell when you come home from work!  Blend in blender or use food processor if you don’t want the vegetable chunks.  For me, I don’t mind the chunks and leave it as is for vegetable tomato soup.  Today I am going to blend and will add 2% milk until it is a creamy red in color.  Other days I leave it chunky.

Other things you can add if you like are oregano, pepper, and parmesan cheese.  That’s it.  Scoop into bowls to enjoy now and save some to freeze to have at another time.
